Jan. 3


This recipe is in the SmartSteamer cookbook that comes with your Steamer:

1lb. Yukon Gold potatoes, peeled and cut into small chunks
2 cups broccoli florets
3/4 fontina cheese (I didn't know what this was so I grated up some cheddar!)
1/2 cup low fat milk
1/2 tsp. salt and pepper

Put potatoes in the Steamer base and place on top of the Water Tray filled to teh line with water. Place in microwave and heat on high for 5 minutes. Fill Colander (the smaller tray) with broccoli and place the Colander between the Steamer Bawse and cover. Place in teh microwave and heat on high for 12 minutes. When potatoes are soft and can be pierced with a fork, transfer all ingredients to the Mix-N-Stor Plus Pitcher and coarsely mash.

(I used a hand blender and this was SOO easy and very good. Also, it's a great way to get your vegetables in without having to actually eat whole broccoli!)
